  • 100grams Brussels sprouts

  • 1teaspoons pickled ginger
  • 1teaspoons kewpie mayonnaise
  • 2tablespoons light soy sauce
  • sunflower oil
  • 2 free range eggs (lightly beaten)

Description

Inspired by the Japanese classic Okonomiyaki pancake, these crispy fritters are full of green vegies, perfect for vegetarians and are ready in under 30 minutes.

Method

Step 1 of 3

Combine egg, soy, sesame oil, flour, baking powder and 1/2 cup water in a bowl. Add sprouts, cabbage, beans, and white part and three-quarters of the green part of onion. Combine, season and stand for 10 minutes or until vegetables soften slightly.

Step 2 of 3

Pour sunflower oil in a large frying pan to come 5mm up side. Heat over medium-high heat. Add 4 x 1/4 cups of batter to pan, spreading each to an 8cm round. Cook for 2 minutes on each side or until golden and cooked through. Transfer to a plate and cover. Repeat to make a total of 12.

Step 3 of 3

Serve with ginger, remaining onion, mayonnaise and sauce.
