- 2 1/4 cups salad leaves (leftover such as rocket or baby spinach leaves)
- 1/2 bunch herb stalks (leftover such as parsley, basil and coriander)
- 1/2 cup pitted green olives
- 3/4 cup Woolworths walnuts
- 1 clove garlic , quartered
- 1 lemon, zested, juiced
- 1/2 cup extra virgin olive oil
Description
A great way to use up leftover salad leaves, this easy pesto is delicious tossed through pasta, used as a base sauce for pizza or dolloped on lamb cutlets.

Place all of the ingredients in a food processor and process until smooth and combined. Season.
