  • 4 cups plain flour
  • 2tablespoons dried mixed herbs
  • 2teaspoons salt
  • 1 cup extra virgin olive oil
  • 1 1/2 cups reserved whey
  • 1 sprig rosemary

Description

This aromatic herb whey flatbread is great served as an elegant appetiser or side dish. It's easy to make and can help use up any forgotten pantry ingredients.

Method

Step 1 of 2

Place flour, dried herbs, salt and 2 tbs oil in a large bowl. Add whey. Mix into a soft dough. Turn out onto a lightly floured work surface and knead for 5 minutes or until smooth and elastic.

Step 2 of 2

Divide dough into 12 equal portions. Roll each dough portion out to create a 15cm disc. Heat 2 tbs of remaining oil in a large non-stick frying pan over medium heat. Add dough and cook for 1-2 minutes each side or until flatbread is golden brown. Transfer to a chopping board. Repeat with remaining dough portions, reheating pan and topping up oil between batches. Serve with rosemary.
