10 Ingredients

  • 1/2 bunch continental parsley
  • 1 punnet dill
  • 250grams vegetables , coarsely grated (see Tip)
  • 1 small brown onion, thinly sliced
  • 1 lemon, zested, juiced
  • 1teaspoons caraway seeds, toasted
  • 1/2 cup instant mashed potato flakes
  • 2 free range eggs, lightly beaten
  • 1/4 cup sunflower oil, for shallow-frying
  • 1/2 cup Woolworths sour cream

Description

Golden crunchy vegetable latkes make a delicious starter or snack. Dip them in creamy herbed sour cream for a treat for your tastebuds.

Method

Step 1 of 3

Separate parsley leaves and stems and three-quarters of the dill leaves and stems, reserving remainder, then finely chop. Combine vegetables, herb stems, zest, seeds, potato flakes and egg in a large bowl. Season.

Step 2 of 3

Pour enough oil into a large, deep frying pan to come 1cm up side of pan. Heat over medium heat. Working in batches, place 1/4 cupfuls of vegetable mixture in pan. Cook for 3 minutes on each side or until golden and cooked through. Transfer to a wire rack. Repeat with remaining vegetable mixture to make a total of 9 latkes.

Step 3 of 3

Meanwhile, place sour cream, lemon juice and herb leaves in a food processor and process until combined. Serve latkes with herbed sour cream and remaining dill.

Tip:
We used a mixture of potato, parsnip, carrot and sweet potato to make these latkes.
