- 2 slices sourdough bread, day-old, roughly torn
- 1/4 cup Woolworths milk
- 100grams garlic & sea salt butter, melted
- 2 broccoli heads
- 1/4 bunch continental parsley, leaves and stalks separated, finely chopped
- 40grams parmesan, finely grated
- 2 cloves garlic , thinly sliced
- 1/4teaspoons dried chilli flakes
- 1 lemon, cut into cheeks (to serve)
Description
Use the whole broccoli in this warming roasted broccoli recipe. Topped with croutons, chilli and parmesan, this hearty side is sure to satisfy.
Method
Step 1 of 4
Preheat oven to 240°C/220°C fan-forced. Line a baking tray with baking paper.
Step 2 of 4
Place bread and milk in a medium bowl and stand for 10 minutes or until milk has been absorbed. Using clean hands, break bread into smaller pieces. Drizzle over half of the butter.
Step 3 of 4
Meanwhile, cut broccoli into small florets and stalks into 1cm-thick slices. Place broccoli on tray. Scatter with parsley stalks, drizzle with remaining butter, then scatter with half of the parmesan and bread mixture. Bake for 15 minutes or until broccoli is tender. Scatter over garlic, then bake for a further 5 minutes or until garlic is fragrant.

Sprinkle chilli, parsley leaves and remaining parmesan over broccoli, then serve with lemon cheeks.
