Tahini Mint Sauce Ingredients
- 1 cup tahnini
- 2 cups mint leaves
- 1 lemon, 4 tbs juiced
- 1 clove garlic, minced
- 1/2teaspoons salt
- 3/4 cup water
- 1 jar MasterFoods Moroccan Style Spice Paste
- 4 chicken breasts
- 2 cups couscous
- 1/2 cup chopped almonds
- 250grams rocket
- 1/2 cup cranberries
- 100grams pitted olives, chopped

Method
Step 1 of 6
Preheat the oven to 180 degrees.
Step 2 of 6
Put the chicken breasts into a bowl and smother with all the spice paste

Heat an oven proof fry pan over a medium heat and fry the chicken 3-4 minutes until golden. Turn over, then cook in the oven for 10-12 minutes until cooked and sticky.
Step 4 of 6
Boil the kettle with the 4 cups of water. Add to couscous. Let sit for 10 minutes. Stir in cranberries, almonds, olives and parsley (lemon juice option).
Step 5 of 6
Blend all tahini mint sauce ingredients in a blender or food processor until smooth.
Step 6 of 6
Assemble the couscous, chicken and add on the tahini mint sauce
