  • 1/3 cup caster sugar
  • 125grams raspberries (plus extra to serve)
  • 600milliliter Pura double thick cream (plus extra to serve)
  • 2teaspoons Queen Organic Vanilla Bean Paste
  • 36 petite meringue nests
  • 2tablespoons mint (to decorate)
  • fresh blueberries (to decorate)
  • 2tablespoons hazelnuts, toasted, roughly chopped (blanched )
  • 25grams white chocolate, shaved

Description

Looking for a quick and easy dessert that looks spectacular? Mini pavlovas are the secret to this stunning dessert and with a rich dollop of cream and berries, it's sure to be a hit.

Method

Step 1 of 3

Place sugar, raspberries and 2 tbs water in a small saucepan over medium heat. Cook, stirring frequently, for 8 minutes or until sugar has dissolved and mixture has thickened. Remove pan from heat and stand for 1 hour to cool completely.

Step 2 of 3

Place cream and vanilla into a large bowl and hand whisk until cream just thickens (ensure not to over whisk). Spoon half the raspberry mixture over cream, then fold to create a marbled effect.

Step 3 of 3

Arrange 8 meringues in a circle on a platter, then place 1 or 2 meringues in the centre. Top each meringue with a dollop of cream mixture, then continue layering with remaining meringues and cream to create a tree shape. Arrange mint, blueberries and extra raspberries on meringue tree. Scatter over hazelnuts and chocolate, then serve immediately with remaining raspberry mixture and extra cream.
