  • 2teaspoons cornflour
  • 300milliliter thickened cream, whipped
  • 1/2teaspoons vanilla extract
  • 1teaspoons vinegar white
  • 250grams fresh strawberries
  • 2 fresh passionfruit
  • 1 pinch cream of tartar
  • 4 eggs
  • 1 cup caster sugar

Method

Step 1 of 7

Preheat oven to 130°C.

Step 2 of 7

Line 2 baking trays with baking paper. Draw 3, 10cm circles on each piece of paper.

Step 3 of 7

Using an electric mixer, beat egg whites and cream of tartar until stiff peaks form. Add sugar, 1 tablespoon at a time, beating well after each addition. Continue beating until meringue becomes thick and glossy.

Using a large metal spoon, gently fold in cornflour, vinegar and vanilla.

Step 5 of 7

Spoon meringue onto baking trays, using circles as a guide. Bake on the lowest shelves of oven for 1 hour 15 minutes or until crisp. Turn off oven.

Step 6 of 7

Leave pavlovas to cool completely in oven with door slightly ajar.

Step 7 of 7

Once pavlovas have cooled, spoon whipped cream onto each and decorate with fruit of choice.
