  • 1/2 pineapple, peeled, cored, diced
  • 4 passionfruits, halved, pulp removed
  • 1 lime, zested
  • 1 1/4 cup thick coconut yoghurt
  • 1/2 cup coconut flakes
  • 4 free range egg whites
  • 2/3 cup caster sugar

Method

Step 1 of 3

Preheat oven to 180°C. Grease and line a 26x32cm swiss roll pan with baking paper, leaving sides to overhang.

Using an electric mixer, whisk egg whites on high speed to firm peaks. Gradually add sugar, 1 tbs at a time, beating well between additions until sugar dissolves. Spoon into pan and smooth surface with a palette knife. Sprinkle evenly with coconut flakes. Bake for 15 minutes or until golden brown on top and just firm.

Turn meringue out onto a sheet of baking paper and gently peel away lining paper. Cool for 3 minutes. Spread half the yoghurt along one long edge closest to you. Top with half each of the pineapple and passionfruit. Carefully roll into a log, peeling back the paper as you roll. Place on a long serving platter or board. Top with remaining yoghurt and fruit. Sprinkle with zest and serve.
