- 1 1/2tablespoons vegetable oil
- 140grams potato, diced
- 1 onion, sliced lengthways
- 2 1/2tablespoons Tamarind purée
- 2 kaffir lime leaves, shredded
- 4 red chilli, chopped (to garnish)
- 2 shallots, finely chopped
- 2tablespoons Massaman curry paste
- 29grams unsalted roasted peanuts
- 500grams chicken, diced
- 400grams can coconut milk
- 2/3 cup chicken stock
- 2tablespoons fish sauce
- 43grams brown sugar
Method
Step 1 of 4
Heat the oil in a saucepan and lightly brown the shallots for 2-3 minutes. Add the curry paste and peanuts and stir-fry for another 3-4 minutes or until fragrant.
Step 2 of 4
Add the chicken or beef and stir-fry for 4-5 minutes. Add the coconut milk, stock, 2 tablespoons fish sauce and 40g sugar. Simmer for 10-15 minutes or until the meat starts to get tender.
Step 3 of 4
Add the potato, onion, 2-½ tablespoons tamarind purée and continue cooking for another 5-6 minutes or until the potatoes are tender. Adjust to taste, using the rest of the fish sauce, sugar and tamarind purée if necessary.
Step 4 of 4
Spoon into serving bowls, garnished with shredded kaffir lime leaves and chopped chilli.
