- 2tablespoons sugar
- 4-5tablespoons curry paste
- 3tablespoons fish sauce
- 1 red chilli, diagonally cut (optional)
- 1 potato, pre-cooked, cubed
- 500grams beef fillets, diced
- 1 1/2tablespoons tamarind puree
- 2 cup jasmine rice, steamed (to serve)
- 1 cup coconut milk
- 2tablespoons oil
- 1/2 cup roasted peanuts (optional)
Method
Step 1 of 3
Mix coconut milk with 1 cup of water in a saucepan. Place over medium heat and bring to boil. Add beef and bring to boil. Reduce heat and simmer for 10 minutes or until meat is tender.

Meanwhile, stir-fry curry paste and oil in a frying pan over low heat for 2 minutes or until fragrant. Increase heat to medium and slowly add the remaining coconut milk, fish sauce, sugar and tamarind purée, stirring constantly, until combined.

Add curry mixture to beef mixture. Increase heat and continue cooking until liquid comes to the boil. Add potato and reduce heat to a simmer. Cook until potato softens. Add peanuts and chilli. Remove from heat. Serve with rice.
