  • 540grams coconut milk
  • 1 large onion, finely sliced
  • 1 large potato, chopped into 2cm pieces
  • 450grams microwave rice long grain
  • 1/3 cup massaman curry paste
  • peanuts, roasted (optional, to garnish)
  • 500grams beef fillet, diced into 2cm pieces
  • 1tablespoons vegetable oil

Method

Step 1 of 7

Heat oil in a large wok or pan over medium-high heat.

Step 2 of 7

Add curry paste and cook for 1 min or until fragrant.

Step 3 of 7

Add beef and continue stirring until coated in paste and browned.

Step 4 of 7

Pour in coconut milk, mix well and bring to the boil.

Step 5 of 7

Add potato and onion, reduce heat to medium and simmer for 20 minutes until beef and potato are tender.

Step 6 of 7

Garnish with peanuts.

Step 7 of 7

Serve with steamed rice.
