- 5 black peppercorns
- 5 cloves
- 5 cardamom pods
- 1 star anise
- 1 cinnamon stick
- 1tablespoons loose-leaf black tea
- 1/2teaspoons vanilla extract
- 2 cups milk
- 1tablespoons honey
- 1/4teaspoons ground nutmeg (to serve)
Description
Serve up this masala chai at your next afternoon tea. You can't go wrong with freshly ground spices infused in black tea and whisked with milk and honey.
Method
Step 1 of 2
Using a mortar and pestle, pound peppercorns, cloves and cardamom until lightly crushed. Place clove mixture, star anise, cinnamon, tea, vanilla and 1/2 cup water in a medium saucepan over medium-high heat. Bring to the boil, then reduce heat to medium. Add milk, then bring to a simmer. Simmer for 3 minutes or until fragrant.

Strain mixture into a clean saucepan, discarding solids but reserving star anise. Place pan over medium-low heat. Add honey, whisking, for 1 minute or until mixture is frothy. Divide mixture between 2 mugs. Sprinkle with nutmeg. Serve topped with reserved star anise.
