  • 1teaspoons mustard seeds
  • 1 long red chilli
  • 1/2 brown onion, finely sliced
  • 1teaspoons fennel seeds
  • 1 1/2tablespoons ginger, finely chopped
  • 1tablespoons white wine vinegar
  • 1tablespoons olive oil
  • 1/2 cup brown sugar
  • 2 mangoes, peeled, roughly chopped
  • 1 clove garlic, finely chopped

Method

Step 1 of 3

Heat oil in a small saucepan over medium heat.

Step 2 of 3

Add garlic, ginger, onion, mustard seeds, fennel seeds, chilli and 1 tsp salt and cook for 2-3 minutes or until onion is translucent and spices are fragrant.

Step 3 of 3

Add mango, vinegar and sugar and cook, stirring occasionally, for 15 minutes or until chutney is reduced. Transfer to a sterilised jar and seal.
