  • 1 medium zucchini, grated
  • 1 carrot, grated
  • 1 small onion, finely diced
  • 2 cloves of garlic, minced
  • 5 eggs
  • 1/4 cup oil
  • 2 rashers bacon
  • 1/4teaspoons salt and pepper (to taste)
  • 1 cup self raising flour
  • 1/2 cup grated cheese

Description

An easy and tasty zucchini slice. I make mine in muffin cases for lunch boxes.

Method

Step 1 of 4

Collect and grate the zucchini, carrot and cheese in large bowl. Add diced onion, garlic and diced bacon.

Step 2 of 4

Add eggs, flour and oil and mix well. Season with salt and pepper.

Step 3 of 4

Spoon into muffin trays. I like to use these silicone reusable muffin cups to go into lunch box.

Step 4 of 4

Bake at 170 degrees for 20 minutes. Enjoy!
