- 1 large onion, peeled and sliced
- 2 large carrots, peeled and finely chopped
- 2 sticks celery, peeled and finely chopped
- 3 cloves garlic, peeled and minced
- 1tablespoons tomato puree
- 2teaspoons Italian herbs
- 400grams chopped tomatoes, canned
- 1L chicken stock, hot
- 100grams pasta, dried
- 100grams kale, destalked and chopped
- 50grams parmesan, grated

Description
This easy minestrone soup requires less ingredients than most but is still packed with Italian flavour.
Method
Step 1 of 4
Heat the oil in a large, deep pan on medium high heat and cook the onion, carrot and celery for 10 minutes. Add the garlic, tomato puree and herbs and cook for 1 minute.
Step 2 of 4
Pour in the chopped tomatoes, stock and pasta and bring to the boil. Reduce the heat and simmer for 8-10 minutes.
Step 3 of 4
Stir in the kale and half the parmesan and cook for 2 minutes to wilt the kale.
Step 4 of 4
Divide between 4 bowls, top with the rest of the parmesan and serve.
