  • 1/4 cup extra virgin olive oil
  • 1 brown onion, finely chopped
  • 2 carrots, finely chopped
  • 3 cloves garlic, crushed
  • 2teaspoons dried Italian herbs
  • 800grams diced tomatoes
  • 1 cup dried green lentils, rinsed, drained
  • 1L vegetable stock
  • 1/2 bunch kale
  • crusty bread (to serve)

Method

Step 1 of 3

Heat oil in a large saucepan over medium heat. Add onion and cook, stirring, for 5 minutes or until softened. Add carrot and garlic, then cook, stirring, for 3 minutes or until garlic turns light golden.

Step 2 of 3

Add herbs, tomatoes, lentils and stock, then bring to the boil. Reduce heat to low and simmer, covered, for 40 minutes or until lentils are tender.

Step 3 of 3

Meanwhile, trim and discard kale stalks. Coarsely chop leaves. Stir kale leaves into soup and cook for 2 minutes or until wilted. Divide soup among bowls and serve with bread.
