  • 2tablespoons Monini Classico Extra Virgin Olive Oil
  • 400grams Mutti Cherry Tomatoes
  • 400grams Mutti Passata
  • 100grams brown onion, chopped
  • 100grams carrot, chopped
  • 1 stalk celery, chopped
  • 100grams white potato, washed, peeled, chopped
  • 1L vegetable stock
  • 400grams cannellini beans, rinsed, drained
  • 1/2 cup small shells pasta
  • 1 bunch oregano, leaves picked, chopped
  • 100grams green beans, trimmed, cut into 2cm pieces
  • 100grams zucchini, diced
  • 1/2 bunch silverbeet, stems removed, leaves shredded
  • 60grams parmesan, finely grated (to serve)
  • 2 cloves garlic, crushed

Method

Step 1 of 2

Heat oil in a large saucepan or stockpot over medium heat. Add onion, carrot and celery, then cook for 5 minutes or until softened. Stir in garlic and potato, then cook for 1 minute. Add tomatoes, passata and stock, season and simmer for 5 minutes.

Step 2 of 2

Add beans, pasta and oregano, increase heat to medium-high and bring to the boil. Cook for 5 minutes. Add green beans, zucchini and silverbeet. Reduce heat to medium and simmer for 10 minutes or until vegetables and pasta are tender. Serve topped with parmesan.
