- 2tablespoons Monini Classico Extra Virgin Olive Oil
- 400grams Mutti Cherry Tomatoes
- 400grams Mutti Passata
- 100grams brown onion, chopped
- 100grams carrot, chopped
- 1 stalk celery, chopped
- 100grams white potato, washed, peeled, chopped
- 1L vegetable stock
- 400grams cannellini beans, rinsed, drained
- 1/2 cup small shells pasta
- 1 bunch oregano, leaves picked, chopped
- 100grams green beans, trimmed, cut into 2cm pieces
- 100grams zucchini, diced
- 1/2 bunch silverbeet, stems removed, leaves shredded
- 60grams parmesan, finely grated (to serve)
- 2 cloves garlic, crushed
Description

Method
Step 1 of 2
Heat oil in a large saucepan or stockpot over medium heat. Add onion, carrot and celery, then cook for 5 minutes or until softened. Stir in garlic and potato, then cook for 1 minute. Add tomatoes, passata and stock, season and simmer for 5 minutes.
Step 2 of 2
Add beans, pasta and oregano, increase heat to medium-high and bring to the boil. Cook for 5 minutes. Add green beans, zucchini and silverbeet. Reduce heat to medium and simmer for 10 minutes or until vegetables and pasta are tender. Serve topped with parmesan.
