  • 1 cup broccoli, finely chopped (see note)
  • 1 small sweet potato, grated
  • 50grams button mushrooms, chopped
  • 1 small zucchini, grated
  • 1 cup salt-reduced stock
  • 2teaspoons olive oil
  • 1 chicken thigh fillet, finely diced

Method

Step 1 of 2

Heat oil in a medium saucepan. Add chicken and mushroom and cook, stirring frequently, for 4 minutes or until golden. Add vegetables and stock or water, cover and simmer for 10 minutes or until vegetables are very soft and chicken is cooked through.

Step 2 of 2

For younger kids, use a stick blender (or food processor) to purée the soup, adding milk for desired consistency.
