  • 2tablespoons coriander sprigs (to garnish)
  • 1/2 small onion, finely chopped
  • pinch chilli flakes (optional)
  • 1/2teaspoons ground coriander
  • 400grams can chickpeas, drained, rinsed
  • 1tablespoons Greek-style yoghurt
  • 1/4 cup roasted capsicum strips
  • 300milliliter tomato soup
  • 2teaspoons olive oil
  • 1 clove garlic, crushed

Method

Step 1 of 1

Heat oil in a small saucepan over medium heat. Add onion and garlic and cook for 3 minutes or until softened. Add ground coriander and chilli, if desired, and stir for 30 seconds. Stir in half of the chickpeas (see tip) and stir for 2 minutes or until golden. Pour in soup and capsicum. Simmer for 5 minutes. Pour into a bowl and add a dollop of yoghurt. Garnish with coriander and serve immediately.
