  • 1/3 cup coriander leaves
  • 1 brown onion, coarsely chopped
  • 800grams orange sweet potato, peeled, coarsely chopped (see tip)
  • 1 1/2teaspoons lime juice
  • 2teaspoons ground coriander
  • 2teaspoons ground cumin
  • 1 1/2teaspoons paprika
  • 400grams chickpeas, rinsed, drained
  • 1/2 cup Greek-style yoghurt
  • 2tablespoons olive oil
  • 1 1/2tablespoons pepitas
  • 2 cloves garlic, crushed

Method

Step 1 of 4

Heat oil in a large saucepan over high heat. Cook garlic and onion, stirring, for 5 minutes or until softened. Add cumin, coriander and 1 tsp of the paprika. Cook, stirring, for 1 minute or until fragrant.

Step 2 of 4

Add potato, half of the chickpeas and 1 litre of water and bring to the boil. Simmer, uncovered, for 15-20 minutes or until potato is tender.

Step 3 of 4

Meanwhile, preheat oven to 220°C. Place pepitas and remaining chickpeas on a baking paper-lined tray. Sprinkle with remaining paprika. Bake for 10 minutes or until golden. Combine yoghurt and lime juice in a bowl.

Step 4 of 4

Using a stick blender, process soup until smooth. Serve topped with lime yoghurt, baked chickpeas, pepitas and coriander.
