  • 1 1/2 cup self-raising flour
  • 2 eggs
  • 2teaspoons lemon rind, finely grated
  • 40grams butter, at room temperature
  • 1 cup caster sugar
  • 1/3 cup milk
  • 1/2 cup caster sugar (extra)
  • 1/2 cup lemon juice

Description

A light lemony flavoured cake.

Method

Step 1 of 3

Grease a deep 20cm round cake pan and line the base with baking paper. Combine eggs, flour, lemon rind, butter, milk and sugar in a small bowl of an electric mixer or use a hand mixer, mix for 3 minutes.

Step 2 of 3

Pour mixture into prepared pan. Bake in a moderate oven at 180 degrees celsius for about 50 minutes or until a skewer inserted into middle of cake comes out clean.

Step 3 of 3

Combine extra sugar and lemon juice in a small jug. Pour over cake in pan and stand for a further 15 minutes. Turn cake onto a wire rack. Serve cake warm.
