  • 1 1/2 cup self raising flour, sifted
  • 3/4 cup sugar
  • 1tablespoons lemon rind, finely grated
  • 1/3 cup lemon juice, freshly squeezed
  • 1/2 cup milk
  • 125grams butter, softened
  • 2 eggs, lightly beaten

Method

Step 1 of 7

Preheat oven to 180C.

Step 2 of 7

Combine Self raising flour and sugar in a bowl.

Step 3 of 7

Make a well in the center.

Step 4 of 7

Add lemon rind, eggs, lemon juice, milk, and butter.

Step 5 of 7

Combine ingredients to form a smooth batter.

Step 6 of 7

Pour batter into a well greased 20cm cake tin or a 10x20cm loaf tin.

Bake in a moderate oven for about 40-45 minutes.
