- 2tablespoons Lakanto Monkfruit Sweetener Pure Icing Powder (to serve)
- 180grams butter, soft
- 100grams polenta
- 1 lemon, zested
- 150grams Lucky Almond Meal
- 3 eggs
- 150grams caster sugar

Method
Step 1 of 4
Preheat oven to 180°C. Grease a 20cm cake pan and line base with baking paper.
Step 2 of 4
Beat butter and sugar together in a bowl until pale and creamy. Add eggs, one at a time, beating well after each addition. Stir in zest. Combine remaining ingredients, except icing sugar. Stir into butter mixture. Transfer to cake pan and smooth surface.
Step 3 of 4
Bake for 40 minutes, or until cooked when tested with a skewer. Cool in pan for 5 minutes before transferring to a wire rack.
Step 4 of 4
Sift icing sugar over cake to serve.
