- 3/4 cup caster sugar
- 1/2 cup plain flour
- 1/2 cup self-raising flour

- 25grams unsalted butter, softened
- 1teaspoons vanilla essence
- 3 cups shredded coconut
- 1 cup cherry jam
- 300milliliter Woolworths thickened cream, whipped

Description
Make this classic Aussie treat at home with our easy lamington recipe. These fluffy chocolate, coconut and cherry delights are bound to fly off the table.
Method
Step 1 of 7
Preheat oven to 180°C/160°C fan-forced. Grease a 20 x 30cm lamington pan. Line base and sides with baking paper, extending paper 5cm above edges.

Using an electric mixer, beat eggs and sugar in a large bowl on high for 10 minutes or until thick and creamy.

Meanwhile, triple sift flours into a separate medium bowl. Stir butter, vanilla and 2 tbs hot water in a small bowl until melted.

Sift flours over egg mixture. Add butter mixture, then, using a whisk, gently fold until incorporated. Pour into pan and smooth top. Bake for 25 minutes or until a skewer inserted into centre comes out clean. Stand in pan for 5 minutes before transferring to a wire rack to cool. Cut cake into 15 squares. Place on a baking paper-lined tray and freeze for 1 hour.

Meanwhile, to make the chocolate icing, whisk all of the ingredients and 1 cup boiling water together in a large bowl until smooth and combined.

Place coconut in a shallow bowl. Using 2 forks, dip 1 piece of cake in icing. Shake off excess, then toss in coconut. Place on a wire rack over
a baking tray. Repeat with remaining cake, icing and coconut. Stand for 20 minutes or until set.

Halve lamingtons horizontally. Spread half of the lamingtons with jam and top with cream. Sandwich with remaining lamington. Serve.
