  • 2tablespoons mint leaves, finely chopped (plus extra leaves to garnish, plus 1 1/2 tbs shredded mint for raita)
  • 1 small brown onion, grated
  • 1/2teaspoons chilli flakes
  • 1/2teaspoons ground coriander
  • 1teaspoons ground cumin
  • 1 lemon juiced and rind, finely grated
  • 1 cup Greek yoghurt (for raita)
  • 500grams lamb mince
  • 2teaspoons olive oil
  • 450grams coleslaw kit
  • 1/2teaspoons flaked salt
  • 1 clove garlic, crushed (and extra 1 clove crushed for raita)

Method

Step 1 of 5

Place lamb mince, onion, garlic, cumin, coriander, chilli, lemon rind, mint and salt into a large bowl. Mix well to combine.

Divide kofta mixture into 8 even portions. Shape into long sausage shapes and place onto a plate. Chill for 15 minutes to firm.

Meanwhile, mix raita ingredients together in a bowl.

Heat oil in a large non-stick frying pan over medium-high heat. Cook the kofta, turning often, for 12 minutes or until browned well on all sides.

Step 5 of 5

To serve, place coleslaw on a platter and add the dressing. Top with kofta and mint leaves, then serve with raita on the side.
