- 2tablespoons currants
- 1 cup coriander leaves
- 2 Lebanese cucumbers, diced
- 1 cup mint leaves
- 1/2 cup mint leaves, chopped (extra)
- 1 medium red onion, chopped
- 250grams cherry tomatoes, quartered
- 1 pinch salt (for seasoning)
- 1teaspoons ground coriander
- 2teaspoons ground cumin
- 1/2teaspoons smoked paprika
- 1 lemon, rind finely grated (plus juice)
- tzatziki (to serve)
- 1 pinch pepper (for seasoning)
- 500grams beef mince
- 1tablespoons olive oil (for frying)
- 2tablespoons olive oil
- 2 garlic cloves
- 2tablespoons pine nuts

Description

Method
Step 1 of 5
Place onion, garlic, pine nuts, mint and coriander into a food processor. Process until finely chopped. Add mince and process to combine. Transfer to a bowl.

Preheat oven to 180°C. Line a large baking tray with baking paper.
Step 3 of 5
Add cumin, coriander, paprika, tomato paste and currants to mince mixture. Season with salt and pepper and stir until combined. Form 2 tbs of the mixture into sausage shapes and thread onto skewers.
Step 4 of 5
Heat oil in a large non-stick frying pan over a medium-high heat. Add the skewers, in batches, and cook for 8 minutes or until golden on all sides. Transfer to baking tray. Bake for 10 minutes or until cooked through.
Step 5 of 5
Combine tomato, cucumber, extra mint, lemon rind, 2 tbs of lemon juice and oil in a bowl. Spoon onto a platter. Top with skewers. Serve with tzatziki.
