- 250grams macaroni
- 80grams baby spinach
- 1/2teaspoons ground nutmeg
- 2 cups Woolworths lite milk

- 1 1/4 cups grated light tasty cheese
- 20grams parmesan, finely grated
- 5milliliter extra virgin olive oil cooking spray

Description
A healthier twist on a creamy pasta favourite, this delicious mac and cheese recipe with broccoli and baby spinach leaves will become your new go-to.
Method
Step 1 of 4
Bring a large saucepan of water to the boil over high heat. Cut stems from broccoli. Cut broccoli heads into large pieces. Cook broccoli, including stems, for 5 minutes or until just tender, then transfer to a chopping board.
Step 2 of 4
Add pasta to boiling water and cook according to packet instructions. Drain.
Step 3 of 4
Place half of the broccoli and all of the stems in a food processor with spinach, milk, nutmeg and parsley. Process until smooth and green. Transfer mixture to a large saucepan over low heat and bring to a simmer. Cook, stirring occasionally, for 5 minutes, then add cheese and stir for 2 minutes or until cheese has melted and mixture has thickened. Stir in pasta.
Step 4 of 4
Cut remaining broccoli into small florets and spray with oil. Heat a frying pan over medium-high heat. Cook florets for 5 minutes or until lightly charred. Divide pasta mixture among bowls. Top with charred broccoli and parmesan. Serve.
