- 1/3 cup pepitas, toasted
- 1/2 long red chilli, deseeded, finely diced
- 1/2 bunch basil
- 1 clove garlic, crushed
- 1 lemon, zested, juiced

Method
Step 1 of 2
Bring a large saucepan of water to the boil over medium-high heat. Add zucchini and cook for 1 minute or until just tender. Drain well.
Step 2 of 2
Meanwhile, place oil, pepitas, chilli, basil, garlic and lemon juice in a food processor and process until smooth. Transfer to a large bowl and season with pepper. Add zucchini and 2 tbs water, then toss to coat. Divide among bowls and serve with extra basil and zest.
