Description
Made without milk or cream, this vegetarian quiche recipe is dairy-free and the ideal healthier summer dish. Portion it up and enjoy throughout the week.
Method
Step 1 of 3
Preheat oven to 200°C/180°C fan-forced. Spray a 26cm (4cm deep) round quiche dish with oil.
Step 2 of 3
Whisk together eggs, soy milk and mustard in a large bowl. Season with pepper.
Step 3 of 3
Place tomato and zucchini in dish and pour over egg mixture. Push in kale stalks. Bake for 45 minutes or until light golden and cooked through. Season with pepper. Cool for 15 minutes, then serve.
