  • 3 large zucchini, finely grated (save 1 spiralised zucchini to decorate)
  • 1 1/4 cups cheddar, finely grated
  • 1 3/4 cups milk
  • 2 free range eggs
  • 1/4 cup extra virgin olive oil

Method

Step 1 of 4

Preheat oven to 180°C/160°C fan-forced. Line a 12-hole 1/3-cup capacity muffin pan with paper cases.

Step 2 of 4

Place flour, baking powder and pepper in a large bowl and stir to combine. Add oregano, garlic, zucchini and cheese, then stir to combine and make a well in centre.

Step 3 of 4

Whisk milk, eggs and oil in a bowl. Pour egg mixture into zucchini mixture and stir until just combined.

Step 4 of 4

Divide mixture among cases. Top with extra zucchini and season with pepper, then bake for 30 minutes or until golden and a skewer inserted into centres comes out clean.
