- 4 Royal Gala apples, peeled, cored, cut into 1cm pieces
- 2 1/2teaspoons ground cinnamon (save 1/2 tsp to serve)
- 2tablespoons honey
- 1teaspoons vanilla bean paste
- 1 lemon, juiced
- 16 sheets filo pastry
- 5milliliter olive oil cooking spray
- 1 free range egg, lightly beaten
- 1/2 cup smooth ricotta

Description
Take the flavours of apple pie and wrap them into a cute and neat little package. Serve these healthier apple-filled filo pastry cigars with a ricotta dip.
Method
Step 1 of 5
Combine apple, 1½ tsp cinnamon, 1½ tbs honey, ½ tsp vanilla and lemon juice in a large frying pan and heat over medium heat. Cook, uncovered, for 15 minutes, stirring occasionally, or until liquid has evaporated and apple is tender. Set aside to cool completely.

Meanwhile, preheat oven to 220°C/200°C fan-forced. Line a baking tray with baking paper.

Cover pastry with a damp tea towel to prevent it drying out. Place 1 pastry sheet on a flat surface and spray with oil. Top with another sheet and spray with oil. Fold stack in half to form an 18 x 24cm rectangle. Place one-eighth of the apple mixture along 1 short end. Brush opposite end with a little egg. Starting at end with apple mixture, roll up pastry, folding in sides to enclose filling. Place on tray. Brush with a little egg. Repeat with remaining pastry, apple mixture and egg. Bake for 15 minutes or until golden and heated through.

Meanwhile, combine ricotta and remaining cinnamon, honey and vanilla in a small bowl.

Lightly dust apple pie cigars with extra cinnamon. Serve with ricotta dip.
