  • 2 Macro Organic free range eggs
  • 1/3 cup Macro Organic rice malt syrup
  • 3 large Macro Organic bananas, mashed (overripe, plus extra sliced to serve)
  • 3/4 cup Macro Organic vanilla bean yoghurt
  • 1 cup Macro Organic rolled oats (plus 2 tbs extra)
  • 1 1/2 cups Macro Organic self-raising flour
  • 2teaspoons ground cinnamon
  • Macro Organic blueberries (to serve)

Description

This easy banana bread recipe is packed full of oats and creamy banana. Make ahead for a tasty and nutritionally approved treat.

Method

Step 1 of 3

Preheat oven to 210°C/190°C fan-forced. Lightly grease a 24 x 13cm (6.5cm deep) loaf pan with baking paper.

Step 2 of 3

Whisk eggs and syrup in a large bowl until combined. Add banana and yoghurt, then stir to combine. Add oats, flour and cinnamon, then stir until combined (do not overmix).

Step 3 of 3

Pour mixture into pan and sprinkle with extra oats. Bake for 45 minutes or until a skewer inserted into centre comes out clean. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely. Slice and serve with blueberries and extra banana.
