  • 350grams self-raising flour, sifted
  • 1teaspoons baking powder
  • 200grams Lancashire cheese, grated
  • 100grams thick-cut ham, finely diced
  • 4 spring onions, finely sliced
  • 1teaspoons smoked paprika
  • 12 freshly ground black pepper
  • 1 1/3 cup whole milk
  • 1 egg, lightly beaten

Description

These unusual muffins add a savoury twist to a weekend breakfast or brunch.

Method

Step 1 of 4

Preheat the oven to 180°C. In a large bowl, mix together all the dry ingredients until they are well combined.

Step 2 of 4

Mix together the milk and egg. Make a well in the centre of the dry ingredients and pour the milk mixture in, incorporating it gradually to make a thick batter.

Step 3 of 4

Line a 12-hole muffin tin with paper muffin cases, then divide the batter between them.

Step 4 of 4

Bake in the middle of the oven for 25 minutes until the muffins are well risen and a skewer comes out clean. Transfer to a wire rack to cool for 5 minutes. Serve warm.
