  • 3 bunches Dutch carrots, trimmed
  • 150grams goat cheese, crumbled into large pieces
  • 1/2 cup pecans, toasted, coarsely chopped
  • 1/4 bunch continental parsley, leaves picked
  • 1teaspoons dried chilli flakes
  • 1 medium red onion, thinly sliced

Description

Wow your guests with these caramelised grilled maple carrots served with creamy chilli goat cheese, pecans and parsley. The easy side dish will bring big flavour and texture to any festive spread.

Shopping tip:
Baby carrots or large carrots cut in half can be used in place of Dutch carrots. Cooking time will vary.

Method

Step 1 of 3

Preheat a barbecue or large chargrill pan over medium-high heat. Whisk cup maple syrup and oil together in a small jug. Place carrots on a large tray. Drizzle 2 tbs maple mixture over carrots. Season and toss to evenly coat.

Step 2 of 3

Grill carrots, in batches, turning and brushing with remaining maple mixture occasionally, for 8 minutes or until tender and browned. Transfer to a plate. Cover with foil to keep warm.

Step 3 of 3

Arrange carrots on a large serving plate. Scatter cheese, pecans and parsley over carrots. Sprinkle with chilli. Top with onion. Serve drizzled with remaining maple syrup.
