  • 500grams large shell pasta
  • 2 bunches asparagus, trimmed, cut into 3cm pieces
  • 150grams green beans, trimmed, cut into 3cm pieces
  • 1 cup frozen peas
  • 1 large avocado, halved, deseeded, peeled
  • 1 bunch basil, leaves picked
  • 1/2 lemon, juiced
  • 1/2 cup buttermilk
  • 1/3 cup blanched hazelnuts, toasted, roughly chopped

Description

Get your dose of greens with this delicious pasta salad full of green vegetables and verdent basil.

Method

Step 1 of 3

Cook pasta according to packet instructions, adding asparagus, beans and peas for the last 2 minutes of cooking. Drain, refresh under cold water then set aside.

Step 2 of 3

Place avocado, three-quarters of the basil leaves, lemon juice and buttermilk into a small food processor and process until a smooth dressing forms, adding more buttermilk if needed. Season.

Step 3 of 3

Add cooled pasta and dressing to a large bowl and toss to combine. Scatter over hazelnuts and remaining basil leaves. Serve.
