  • 12 cloves garlic
  • 1 bunch oregano
  • 1 lemon, zested, cut into wedges
  • 1/4 cup extra virgin olive oil
  • 2kilograms Woolworths lamb leg roast
  • 1kilograms potatoes, coarsely chopped
  • 2packets 270g Woolworths Greek-style salad kit

Description

This delicious garlic roast leg of lamb with crunchy golden potatoes and a Greek salad is ready in three easy steps, making it a perfect recipe for any festive occasion.

Method

Step 1 of 3

Crush 4 garlic cloves, leaving remaining garlic cloves intact. Remove leaves from half of the oregano and finely chop. Combine chopped oregano, lemon zest, crushed garlic and 2 tbs oil in a small bowl. Season. Place lamb in a baking dish. Rub oregano mixture over lamb, cover loosely with foil and place in the refrigerator to rest for 30 minutes.

Step 2 of 3

Preheat oven to 200°C/180°C fan-forced. Add potato to pan with lamb and drizzle with remaining oil. Roast for 1 hour or until lamb is browned and potato is almost tender. Add lemon wedges and remaining garlic to the pan. Roast for a further 30 minutes for medium or until lamb is cooked to your liking. Remove the pan from the oven. Allow lamb to rest covered loosely with foil for 15 minutes.

Step 3 of 3

Transfer lamb, potato and garlic to a serving platter. Drizzle with pan juices. Prepare salad kits according to packet instructions. Sprinkle remaining oregano over lamb. Serve with salad.
