- 1tablespoons worcestershire sauce
- 8 chicken wings
- 2tablespoons olive oil
- 3 sprig thyme

Method
Step 1 of 3
Preheat oven to 200°C. Cut 8 chicken wings into sections and place in a roasting pan with 1 chopped onion, 2 chopped carrots and 2 chopped sticks celery. Add 2 tbs olive oil and a few sprigs of thyme or rosemary and season with salt and pepper. Roast for 45 minutes until golden.
Step 2 of 3
Transfer pan to stovetop over medium heat. Sprinkle over 1/4 cup plain flour and stir with a wooden spoon for 5 minutes until golden. Gradually stir in 1 cup boiling water, scraping base of pan.
Step 3 of 3
Add a further 5 cups boiling water and 1 tbs Worcestershire sauce. Simmer for 15-20 minutes until thickened. Using a sieve, strain into a saucepan, pressing firmly. Discard wings and vegetables. Serve immediately.
