- 200grams pork skin
- 10grams salt
- 5grams ground pepper
- 250milliliter canola oil

Instruction tip
I make 2 batches of this recipe at a time. I line the pork crackling very close to each other to maximize the space as they shrink while inside the oven.
Method
Step 1 of 8
Preheat oven to 120°C
Step 2 of 8
Lay the skin flat on the chopping board and cut into small pieces. Like 1x1" per piece and line them up on the baking pan lined with baking paper.

Baking it for 5 hours on the lowest temperature possible in your oven will dehydrate it and you won't consume too much gas or electricity.

Preheat oil on low medium heat and once you try to stick your spoon or chopstick in the cooking oil and it's bubbling, then it's ready for frying.

Flip them every 2 minutes so it will be cooked evenly.

Remove with a strainer and let the excess oil drip on the strainer. Then sprinkle them with mixed salt and ground pepper.

Let it cool completely for 10 minutes. Best to place them in zip lock plastic bags so it will retain its crunch.
My family loves it with spicy vinegar as dip. Enjoy!

After 5 hours. Bring it out to you kitchen counter and let it air dry for 19 hrs or 1 day.
