- 1/2 cup plain flour
- 2 large onions, sliced into 1cm-thick rings
- 1 lime, wedges (to serve)
- 2 free range eggs, whisked
- 2 cup vegetable oil
- 1-2 cup panko breadcrumbs

Method
Step 1 of 5
Separate onion into rings. Place flour, egg and breadcrumbs in separate shallow bowls.
Step 2 of 5
Lightly coat each onion ring in flour, dip in egg and coat in breadcrumbs. Place on a baking paper-lined tray.
Step 3 of 5
Heat oil in a medium saucepan over medium-high heat. Test oil temperature by dropping in a small piece of bread. It should turn golden in 30 seconds.
Step 4 of 5
Lower onion rings, in batches, into oil and cook for 2 minutes or until golden.
Step 5 of 5
Remove from oil with a slotted spoon and drain well on a paper towel-lined plate. Serve with lime wedges.
