  • 4 medium chicken breasts, chopped
  • 3/4 cup chicken stock
  • 2tablespoons green curry paste
  • 4 cloves garlic, peeled and mashed
  • 1 medium green chilli, de-seeded and sliced
  • 1 medium red chilli, de-seeded and sliced
  • 800grams coconut milk
  • 1tablespoons canola oil

Method

Step 1 of 5

Heat up a large saucepan to a medium heat and then add the oil.

Step 2 of 5

Fry the chicken pieces while tossing for 8 minutes.

Step 3 of 5

Add the chillies and garlic and fry for a further 3 minutes.

Step 4 of 5

Add the rest of the ingredients, bring the heat to a simmer and allow to cook for 30 minutes stirring occasionally.

Step 5 of 5

Remove from the heat and suggested serving with rice or naan breads.
