  • 1 cup bean shoots, trimmed
  • 1 handful coriander, finely chopped (to serve)
  • 1/4 wombok, shredded
  • 2 small potatoes
  • 100grams green beans, trimmed, halved
  • 1 pinch chilli flakes (optional)
  • 2teaspoons soy sauce
  • 2 eggs
  • 1/2tablespoons crunchy peanut butter

Description

Try our gado gado salad, a classic Indonesian dish with a unique blend of flavours and textures. This delicious salad is sure to make any meal memorable.

Method

Step 1 of 3

Cook potatoes in a small pan of boiling water for 8 minutes or until just tender. Remove with a slotted spoon and cool. Add eggs to pan and cook for 5 minutes or until cooked to your liking. Cool and peel (see note). Add beans and cook for 3 minutes or until tender. Drain and refresh.

Step 2 of 3

Layer cabbage into a container. Slice potato and egg and arrange over cabbage with beans and shoots. Garnish with shallots and coriander.

Step 3 of 3

To make sauce, place peanut butter, 5 tbs warm water, soy sauce and chilli into a small sealable container. Stir well until smooth and serve over salad (see note). Note: The egg can be transported in its shell and the sauce can be placed in a separate container, so salad stays crisp.
