  • 1/4 bunch coriander, sprigs picked

Description

Light and refreshing, this frozen rockmelon sorbet will help you cool down on a balmy day. The spicy coriander sugar adds a unique flavour that will keep you coming back for more.

Method

Step 1 of 3

Cut rockmelon in half. Scoop out seeds. Spoon sorbet into centre of each rockmelon half, then smooth surface. Cover and freeze for 1 hour or until sorbet is slightly set. Once set, cut each half in half, then freeze for a further 3 hours or until sorbet is firm.

Step 2 of 3

Using a mortar and pestle, pound sugar, chilli and half of the coriander until combined.

Step 3 of 3

Sprinkle rockmelon wedges with coriander sugar and remaining coriander. Serve.
