- 1 1/2tablespoons extra virgin olive oil
- 4 small oranges
- 1tablespoons white wine vinegar
- 1teaspoons honey
- 120grams baby rocket leaves
- 2tablespoons dried cranberries
- 2tablespoons flaked almonds, toasted
- 50grams Danish feta, crumbled
Description
Beautiful cuts of fresh orange are caramelised for this showstopping salad, which features rocket, sweet cranberries and little wodges of creamy, salty feta.
Method
Step 1 of 3
Heat 2 tsp oil in a large frying pan over medium-high heat. Peel oranges and thickly slice into rounds. Add slices, cut-side down, to pan. Cook for 3-4 minutes or until caramelised. Transfer to a plate and set aside for 4 minutes to cool.
Step 2 of 3
Place vinegar, honey and remaining oil in a small bowl. Season and whisk to combine.
Step 3 of 3
Arrange rocket and orange on a serving platter. Sprinkle with cranberries, almonds and feta. Drizzle with dressing. Serve.
