- 50grams unsalted butter
- 1tablespoons white wine vinegar
- 1tablespoons brown sugar
- 2 leeks, trimmed, sliced lengthways
- 1 sheet Woolworths frozen puff pastry, partially thawed
- 2tablespoons Greek-style natural yoghurt
- 1/4 bunch mint, leaves picked
- 1tablespoons natural seed mix with pine nuts
Description
Fresh leek makes the top of this flavourful tarte tatin as pretty as a picture. Slice into a soft, creamy bite and experience the marriage of mint, leek and nutty texture.
Method
Step 1 of 2
Preheat oven to 220°C/200°C fan-forced. Melt butter in a large 20cm (base measurement) ovenproof frying pan over medium heat. Add vinegar and sugar to pan and cook, stirring for 1 minute or until sticky. Arrange leek, cut-side down, in pan. Return pan to heat and cook for 5 minutes or until leek is golden. Remove from heat.

Top leek with pastry, tucking pastry down the sides of pan. Bake for 15-20 minutes or until pastry is puffed and golden. Stand baked tart in pan for 5 minutes before carefully inverting onto a serving plate. Dollop with yoghurt and sprinkle with mint and seeds. Serve.
