  • 1 wholemeal pita bread
  • 5milliliter extra virgin olive oil cooking spray
  • 1/2 cup Woolworths shredded mozzarella
  • 6 leftover ricotta meatballs

  • 1/3 cup Woolworths canned diced tomatoes
  • 15grams baby rocket leaves
  • 4 basil leaves

Description

Stretch last night's delicious vegetarian dinner into a quick, easy and affordable pizza lunch.

Method

Step 1 of 2

Preheat oven to 200°C/180°C fan-forced. Grease and line a baking tray with baking paper. Place bread on prepared tray. Spray with oil. Bake for 5 minutes or until golden. Top with half of the mozzarella. Bake for a further 3 minutes or until the mozzarella melts.

Step 2 of 2

Cut half of the meatballs in half. Top pizza with canned tomato and meatballs, then sprinkle with remaining mozzarella. Bake for 5 minutes or until golden-brown. Serve topped with rocket and basil.
