- 125grams fresh white crab meat
- 1teaspoons chervil sprigs (to garnish)
- 1 small ripe avocado, diced
- 1teaspoons chives, finely chopped
- 1teaspoons lemon juice
- 6 drops tabasco sauce
- 4teaspoons mayonnaise
- 1teaspoons lemon zest, grated
- 1 pinch salt
- 1 pinch black pepper
Method

Mix 125g fresh white crabmeat with 1 small, ripe, diced avocado, 1 tsp finely chopped chives, 1 tsp lemon juice, 6 drops of Tabasco sauce,4 tsp mayonnaise, 1 tsp grated lemon zest, and salt and black pepper. Taste to check the seasoning. Place 1 tsp of the salad on to each spoon and garnish with a few chervil sprigs. For variation, replace the lemon zest and juice with lime and garnish with a few coriander leaves instead of the chervil leaves.
