  • 1 brown onion, finely chopped
  • 2 cloves garlic, crushed
  • 500grams beef mince
  • 35grams Woolworths taco seasoning mix
  • 400grams canned diced tomatoes
  • 420grams canned black beans, rinsed, drained
  • 1 1/2 cups long-grain rice
  • 1/4 bunch coriander, sprigs picked

Description

This hearty chilli con carne makes an easy weeknight meal, then freeze any leftovers to stretch the budget dish further.
Instruction tip
Tip:
This recipe can easily be doubled and freezes well. If freezing, chop the coriander and stir it through the mixture before freezing instead of using it to garnish at the end.

Method

Step 1 of 3

Heat oil in a large frying pan over medium heat. Add onion and garlic and cook for 3 minutes, stirring often, until softened. Add mince and cook for 5 minutes, stirring with a wooden spoon to break up lumps, until browned.

Step 2 of 3

Stir in taco seasoning, tomatoes, black beans and ⅓ cup water. Reduce heat to low and simmer for 15 minutes, or until thickened.

Step 3 of 3

Meanwhile, cook rice according to package instructions. Serve mince mixture with rice. Top with coriander to serve.
