- 200grams pkt Sunsweet Pitted Prunes, roughly chopped
- 1 cup firmly packed brown sugar
- 60grams unsalted butter, chopped
- 1teaspoons bicarbonate of soda
- 1 orange, zested, juiced
- 2 cups self-raising flour
- 1teaspoons ground mixed spice
- 1 free range egg, lightly beaten
- 2teaspoons honey
- 2tablespoons pure icing sugar, sifted

Description
Forget about hot cross buns – this impressive spiced hot-cross-bun loaf cake coated in honey will replace the traditional Easter brunch treat. Enjoy a slice with a cuppa.
Method
Step 1 of 4
Preheat oven to 170°C/150°C fan-forced. Grease a 13x24cm (6.5cm deep) Wiltshire Loaf Pan. Line base and sides with baking paper, extending paper 2cm above edges on all sides.

Place prunes, sugar, butter, bicarbonate of soda, zest, juice and 1/2 cup cold water in a saucepan over medium heat. Cook, stirring, for 5 minutes or until butter has melted. Bring to the boil. Remove from heat. Cool for 10 minutes.
Step 3 of 4
Sift flour and spice into a bowl. Add egg and prune mixture. Fold into flour mixture. Spoon into prepared pan. Smooth surface. Bake for 1 hour to 1 hour 15 minutes or until a skewer inserted in the centre comes out clean.
Step 4 of 4
Cool cake in pan for 10 minutes before transferring to a wire rack. Brush warm cake with honey. Allow to cool completely. Combine icing sugar and 1/2 tsp boiling water in a small bowl. Stir until a smooth paste forms. Spoon into piping bag fitted with a 3mm plain nozzle. Pipe a cross on top of the cake. Set aside for 30 minutes to set. Serve.
