- 250grams San Remo pulse penne pasta
- 500grams lean beef mince
- 1tablespoons dried mixed herbs
- 1tablespoons extra virgin olive oil
- 200grams Woolworths sliced white cup mushrooms
- 400grams Mutti Parma Sugo Semplice Basil pasta sauce
- 290grams Woolworths Italian salad kit (to serve)
- 20grams parmesan, finely grated (to serve)
- 1/4 cup continental parsley leaves (to serve)
Description
For a delicious dinner in a hurry, whip up this hearty pasta with veggie-packed meatballs, mushrooms, and a silky tomato and basil pasta sauce.
Method
Step 1 of 4
Cook pasta in a saucepan of boiling, salted water according to packet instructions. Drain.
Step 2 of 4
Meanwhile, place mince and dried herbs in a large bowl. Season well with salt and pepper and mix well to combine. Using 1 tablespoon at a time, roll mince mixture into balls.
Step 3 of 4
Heat oil in a large frying pan over medium-high heat. Cook meatballs, turning, for 7 minutes or until browned and almost cooked through. Transfer to a large plate. Add mushrooms to pan and cook, stirring, for 4 minutes or until golden and tender. Return meatballs to pan with sauce and 1/2 cup water, then bring to the boil over high heat. Boil for 3 minutes or until sauce reduces slightly and meatballs are cooked through. Season.

Meanwhile, make salad according to packet instructions. Add pasta to sauce mixture and stir to combine. Sprinkle pasta with parmesan and parsley. Serve with salad.
